Fatmata Binta, known affectionately as Chef Binta, embodies the spirit of a modern-day nomadic chef, seamlessly blending her Fulani roots with classical culinary training and a passion for sustainability. Raised in Freetown, Sierra Leone, amidst the turmoil of civil war, Chef Binta witnessed firsthand the unifying power of food during times of hardship. It was these formative experiences that instilled in her a deep appreciation for the role of food in bringing people together. Drawing inspiration from her nomadic heritage and classical training at the Kenyan Culinary Institute, Chef Binta founded Fulani Kitchen, a culinary venture that celebrates West African cuisine while championing sustainability and environmental stewardship. Through Fulani Kitchen, Chef Binta creates authentic, modern dishes that showcase indigenous ingredients and ancient grains, such as fonio, a super grain that she passionately promotes as an ambassador.


Chef Binta's dedication to preserving Fulani culinary traditions goes beyond the kitchen. She is the founder of the Fulani Kitchen Foundation, a nonprofit organization aimed at empowering rural Fulani communities across West Africa.


Through initiatives focused on food processing, distribution, and economic empowerment, Chef Binta is working to improve food security, increase employment opportunities, and preserve Fulani culinary heritage.


In recognition of her tireless efforts, Chef Binta has received numerous accolades, including the prestigious Basque Nobel Culinary World Prize in 2022.


She has also been appointed as a United Nations ambassador for Responsible Tourism, where she advocates for gastronomy tourism as a means of supporting rural communities and fostering sustainability.


At the helm of Dine on a Mat, a nomadic restaurant that offers immersive culinary experiences, Chef Binta invites diners to embark on a journey through West African cuisine and culture. Through her innovative approach to food advocacy and social entrepreneurship, Chef Binta continues to inspire and uplift communities, one dish at a time.
