In 2011, Xanty founded Grupo Xanty Elías, a culinary empire that has become a beacon of innovation and excellence in the Spanish food scene. For nearly a decade, he served as the gerente-chef at r-evolucion-arte-acánthum, where he pushed the boundaries of traditional cuisine, infusing each dish with creativity and heart. His culinary prowess didn’t go unnoticed, and soon, Xanty’s influence extended far beyond the kitchen.

In 2017, he co-founded Fundación Prenauta, a non-profit organization that partners with local communities to promote economic growth and development. Xanty’s most notable achievement came in 2021 when he won the prestigious Basque Culinary World Prize for his groundbreaking initiative, “Los Niños se Comen El Futuro” (The Children Eat the Future).
