From the vibrant heart of Brooklyn, Greg Baxtrom’s culinary journey is nothing short of extraordinary. Born with a passion for transforming ingredients into unforgettable experiences, Greg has carved a niche for himself as a trailblazing chef and visionary restaurateur. In May 2016, Greg unveiled his magnum opus—Olmsted. But this isn’t just any restaurant. Nestled in the charming Prospect Heights neighborhood, Olmsted boasts a backyard that’s a culinary wonderland. Imagine quail and crayfish thriving alongside herbs and vegetables—this is farm-to-table dining redefined, with a touch of backyard magic. The New York Times hailed Olmsted’s unique charm, while Gothamist celebrated its backyard garden as a leading light in the locavore movement.
Before Olmsted, Greg’s culinary path was a whirlwind of prestigious kitchens and transformative experiences. He honed his skills at Alinea in Chicago, where he learned the art of avant-garde cuisine.
His journey then took him to Spain, where he trained under the culinary giants at El Bulli, Arzak, and Mugaritz. Returning to the States, Greg dazzled at Blue Hill at Stone Barns and Per Se, two bastions of gastronomic excellence.
But Greg’s impact goes beyond the plate. During the pandemic, he became a beacon of hope. Leading the New York Hospitality Coalition, he rallied the industry to address the crisis.
With unwavering dedication, Greg transformed Olmsted into a food bank and community support center, collaborating with Maker's Mark and the Ed Lee Initiative to provide essential aid.
His commitment didn’t stop there—he opened the doors of his Maison Yaki restaurant to Black chefs, bartenders, and entrepreneurs, turning the space into a platform for the Black Lives Matter movement.
As a chef dedicated to making a difference, Greg was recognized as one of the top 10 chefs transforming society through gastronomy. His journey from the kitchens of world-renowned restaurants to the streets of Brooklyn is a testament to his culinary brilliance and his heart for social change.
Today, Greg Baxtrom continues to weave magic into every dish, making Olmsted a sanctuary where creativity meets community. His story is one of relentless innovation, compassion, and an unyielding commitment to using food as a force for good.
